A half beef is the oldest and plainest way to buy beef. You buy half of one specific animal, tell the processor how you want it cut, and fill a freezer for months.
How much does half a cow usually cost?
The honest answer starts with a question back: which weight is that price quoted against.
There are three weights in every animal and sellers do not always say which one they mean. Live weight is the animal on the hoof. Hanging weight is the carcass after slaughter and dressing, usually around sixty percent of live. Take home weight is what you actually carry to the freezer, roughly sixty to sixty five percent of hanging, after bone, trim and moisture loss.
A price per hanging pound will always look cheaper than the same deal per take home pound. Neither is dishonest. They are just different, and the only way to compare two farms is to make them both quote the same one.

In the K-State research on direct beef buyers, the two most common complaints were unexpected cost and take home weight coming in lower than expected. Both come from the same root, which is nobody explaining the three weights up front.
The cut sheet is the part that matters
Two people can buy identical halves and take home very different boxes. Ask for thick ribeyes and you get fewer of them. Ask for more ground and the steak count drops. Skip the bones and the organs and the total weight falls, which is the single most common reason people feel short changed.

Is buying half a cow worth it?
Against buying that same spread of steaks, roasts and ground at retail, usually yes and often by a meaningful margin. Against store ground beef on its own, no, and anyone telling you otherwise is comparing the wrong things. You are buying a whole animal, not the cheapest part of one.
The other half of the value is not financial. You know the animal, the ranch and the people, and you can drive out and look at the herd. That is worth something or it is not, depending on you.

Plan on roughly one cubic foot for every 35 to 40 pounds, so a half wants five to six cubic feet. That is a real chest freezer, not the compartment over your fridge.

The form telling the processor how to cut your animal. Steak thickness, how much goes to ground, roast sizes, whether you want bones and organs. It is the part most people do not know they control.
Can I split a half with someone?
Yes, people do it constantly. One person is the point of contact for the cut sheet and the payment, then you divide it afterwards.
