Grass finished beef, and why grass fed is not the same claim.

Almost every beef animal in America eats grass for most of its life. That is what makes grass fed a weak signal on its own. The question that separates one package from another is what happened at the end.

What is the difference between grass fed and grass finished?

Nearly all cattle start the same way. They are born on pasture and they graze for the first year or more of their lives. On that basis almost any beef in the country could be described as grass fed, which is exactly why the phrase appears on so many packages.

What separates one animal from another is the last few months, called finishing. Most cattle are moved to a feedlot at that point and switched to a grain ration, because grain puts weight on faster and marbles the meat more predictably. Grass finished means that never happened.

The last ninety days decide it

Finishing is not a small detail at the end of a long process. It is the period that changes the meat most, and it is the only part of an animal's life that most labels are vague about.

An animal finished on grain will put on weight quickly and marble evenly, which is why the system is built the way it is. An animal finished on grass takes longer, ends up leaner, and varies more from one to the next because grass varies with the season and the year.

If a label says grass fed and goes quiet about finishing,
that silence is usually the answer.

Why does grass finished beef cost more?

Two reasons, and neither of them is marketing.

It takes longer. An animal finished on grass reaches weight months later than one finished on grain, which means months more of grazing, water, minerals and management for the same animal.

And it yields less. A grass finished animal hangs lighter than a grain finished one of the same age, so there are fewer pounds at the end of a longer process. Fewer pounds from more months is the whole explanation.

Anyone who gives you a different reason, or who suggests grass finished beef is expensive because it is somehow superior in a way they cannot describe, is selling.

Is grass finished beef healthier?

The honest answer has two halves and most sellers only give you the first.

The fat is genuinely different. Grass finished beef carries more omega-3 fatty acids, a better ratio of omega-6 to omega-3, more conjugated linoleic acid and more vitamin E. That research is real, it is well established, and it applies specifically to finishing rather than to how the animal was raised. It is also why the fat looks yellower, which is beta carotene from the grass.

What we are not going to tell you is that beef is medicine. The protein, the heme iron, the zinc and the B12 that make beef worth eating in the first place are much the same whichever way the animal was finished. If somebody sells you grass finished beef as a health intervention, be careful with the rest of what they tell you.

Does it taste different?

Yes, and you should know that before you buy a freezer full.

Grass finished beef is leaner and the flavor is stronger and more mineral. People who love it describe it as tasting like something that grew somewhere. People who do not find it too assertive next to the milder, sweeter flavor of grain finished beef.

It also cooks differently. There is less fat to buffer the heat, so the window between right and overdone is shorter. High heat and less time for steaks, and it is very forgiving in anything braised. Our pages on steaks and ground beef go into the specifics.

How can I tell if beef is really grass finished?

Ask one question: where did this animal spend its last ninety days.

An operation that finishes on grass will answer immediately and specifically, usually with a field name. One that does not will change the subject to how the cattle were raised, or to a farming philosophy, or to a certification that does not actually cover finishing.

  • Grass fed on its own is not a finishing claim.
  • Pasture raised is not a finishing claim either. It describes where the animal lived, not what it ate at the end.
  • Organic is unrelated. It covers inputs and certification, not diet at finishing. An animal can be organic and grain finished.
  • 100% grass fed does generally imply finishing, because the word grain never enters the picture. It is the strongest of the common phrasings.

What we do

Our South Poll cattle finish on our own pasture outside Heber Springs, in Cleburne County, Arkansas. They do not leave, they do not get grain, and the animal that ends up in your freezer grazed the same ground its whole life.

South Poll matters here. It is a breed developed in the American South specifically to finish well on grass in heat and humidity. A breed built for a feedlot will struggle to finish on pasture and the beef shows it, which is one reason grass finishing has a mixed reputation.

The strongest thing we can say is that you can come and watch it happen. The gate is open and the herd is standing in the field it was raised in.
